Tea Cake Recipe

The thing that I am loving about joining in with Jenny and Helen’s Great Bloggers Bake Off is that I am trying out new recipes.  I absolutely adore baking, but I do tend to stick to recipes that I know and love. This week I was also keen to try out my amazing new Joseph Joseph Scales that I was very kindly sent from Debenhams.  My old scales have been lurking in my kitchen for about twenty years, so it was lovely to have some digital ones.

This week the theme was sweet dough and my first thought was a tea cake.  I love tea cakes, to me they are a lovely snack and real comfort food when toasted and covered with lashings of butter.  I didn’t get round to baking until Friday, so I found a nice Hairy Bikers recipe on the BBC Good Food website and substituted or left out the ingredients that I didn’t have.
I was surprised at how well these turned out.  They tasted delicious and were actually quite easy to make. They are quite time consuming because of the proving time, but I will definitely make them again.
   Ingredients
  • 375gstrong white bread flour
  • ½ tsp salt
  • 7g sachet fast-action dried yeast
  • 1 tsp ground mixed spice
  • 1 tsp ground cinnamon
  • 1 tsp freshly grated nutmeg
  • 50g caster sugar
  • 50g butter, cubed
  • 150ml  milk
  • 1 egg, beaten
  • 125g mixed dried fruit
  • 2 tsp oil
    Method
    Mix the flour, yeast, salt, spices and sugar in a bowl.
    Put the milk and butter into a small saucepan and warm gently until the butter has melted and the milk is luke warm. Beat the egg into the mixture.
    Make a well in the dry ingredients and pour in the butter and milk.  Stir with a wooden spoon until the mixture is well combined and forms a ball.
    Turn out onto a lightly floured surface and knead for five minutes.  Knead the fruit into the dough until it is evenly distributed.  Place the dough in an oiled bowl, cover with oiled cling film or foil and leave to rise in a warm place for an hour and a half until it has doubled in size and is light and spongy to touch.
    Knead the dough lightly and divide into six portions.  Roll into balls and then flatten each ball with a rolling pin.
    Place onto a baking sheet lined with baking parchment and cover with oiled cling film and leave to rise for a further 45 minutes.
    Preheat the oven to 190C.  Remove the clig film and bake the tea cakes in the oven for about fifteen minutes or until they are well-risen and golden brown.

    They look scrummy!! Where I live now, a bread roll / barm cake is known as a tea cake. They have it sooo wrong!!

    oooooh yummy! i love hot buttered toasted tea cakes – perfect with a cuppa at anytime of the day! your look lovely and i like those scales too!
