Chocolate Tart Recipe

This is a rather basic adaptation of a recipe that I found in a magazine earlier this year and I love it.  It is easy to make, very indulgent and tastes delicious.  I won’t mention the calories as I try not to think about them, but the taste is so good that I don’t worry about it.
Ingredients
100g melted butter
300g biscuits, crushed (I use Fox’s Golden Crunch)
200ml double cream
100g butter cubed
300g chocolate (I use milk but it is equally nice with plain)
cream to serve (optional)
23cm loose-based flan tin
Method

Grease the sides of the flan tin with a little of the melted butter.
Mix the finely crushed biscuits with the melted butter and pour into the tin.  Using the back of a desert spoon, press the biscuit mixture as evenly as you can around the tin, push down firmly.  Put the tin into the fridge to chill for half an hour.
Pour the cream, butter and broken chocolate into a bowl and place over a saucepan of simmering water. Keep stirring until the mixture has all melted and is a smooth brown liquid. Remove from the heat a whisk for a few seconds to ensure the ingredients are mixed together.
Once the base has been chilled for half an hour, pour the chocolate mixture into the base and smooth over with a spoon if needed. Put back into the fridge and chill for at least two hours until it is set.
