Easy Margherita Pizza Recipe

R is a very good helper at the moment as he is working towards his ‘helping around the home’ badge for Cubs.  This means that he is having to do a range of household tasks and we write them down in a diary for him to show his Cub leader.  One of the things was to cook a meal, so yesterday he decided to make a Margherita pizza for us all to have for lunch.

He looked at a few recipes and in the end we combined elements from a couple as he didn’t fancy making a proper base as it would take too long.  He made a scone mixture base and it worked really well and certainly got the thumbs up from us as it was really tasty and the base was surprisingly light. It was so good that I am going to give you the recipe as this is a great recipe to do with kids and the nice thing about pizza is that you can be inventive with the toppings too.

Ingredients
For the base 
225 g plain flour
1/2 teaspoon salt
2 tablespoons cooking oil
150 ml water

For the topping
400g tin of chopped tomatoes
1 small onion finely chopped
1 teaspoon of mixed herbs
1/2 teaspoon sugar
salt and pepper to season
small amount of cooking oil

225g grated cheddar (or you can use chopped mozzarella)

Method

1.  Preheat the oven to 200 c

2.  Sift the flour and salt into a bowl and add the oil and water.  Mix with a round ended knife to make the dough.  If it is too sticky to work with add a little flour until you can get out of the bowl and work with it.

3.  Grease a baking tray and place your dough onto a floured surface.  Knead the dough for a few minutes.

4.  Rub a little flour onto the rolling pin and roll out your dough into the shape you want (ideally a circle but ours was a rectangle).  Carefully move your base onto the greased baking tray with your rolling pin.

5. In a frying pan, gently soften the chopped onion in the oil.  Once they are soft, add the chopped tomatoes.

6.  Add the sugar, herbs and season and cook the mixture for about ten minutes, stirring occasionally.

7.  Spread the topping all over your base and then spread your cheese over the top.

8.  Bake in the oven for around 20 – 25 minutes until the cheese is golden brown.

And enjoy.

    We have been making our own pizzas lots lately but can never get the sauce right. I’ll look forward to trying this! xx

    Brilliant pizza idea I am going to be making this with my boys! I think its really fun to make your own food and get the kids involved too. I hope you all enjoyed it. Although off topic my husband has seen this post and he was immediately drawn to the Back to the future top (He does make me laugh). You should check out the back to the future hoover board he has made on my site. He spent hours doing this but I must admit it does look awesome.
