Easy Ice Cream Cake

Is it possible to put together something to eat entirely from the contents of your freezer? Well if you take a look at the Cool Cookery website, you will see that it is and they have a great selection of recipe ideas all made using predominantly frozen ingredients.

When I thought about this, ice cream came straight to mind as it is something that always goes down very well in this house and I had a vague idea of seeing something like this somewhere, so I decided to make an ice cream cake.

It is very simple to make and you need two ingredients; soft scoop ice cream and an arctic roll.  Take a small to medium pudding bowl and line it with tin foil so that the whole area of the bowl is covered with a little overhanging the top.  Fill the bowl with ice cream and flatten the top and then put the bowl back in the freezer for at least half an hour.

Remove from the freezer and gently turn the ice cream out upside down on to a plate and remove the foil (I use the foil to stop the ice cream sticking to the side of the bowl).  Slice the arctic roll thinly and then cover your ice cream with slices, working from the bottom up.

Serve with strawberries or sauce and enjoy.
