I love finding recipes that work for those midweek evenings when you are juggling kids, sports and everything else and you need something that you know everyone will enjoy, is healthy and is quick and easy to prepare. Lamb Koftas is one of my midweek go-to dishes and we have been enjoying it for a while now as it is so easy and tastes delicious. Not only that but when they are cooking, the koftas smell incredible. too.
I make the lamb koftas and simply pop them in the oven, while they are cooking, I prepare the pitta bread and stuff them with lots of colourful fresh salad and they make a delicious meal. We love them and personally, I think they are perfect with a dash of light mayonnaise too. They are so quick and simple to make and with only a handful of ingredients, it is a great value meal too. I always enjoy cooking with lamb mince especially as lamb is tasty but also provides four essential vitamins (Niacin, vitamins B6 and B12, and pantothenic acid)that help reduce tiredness and fatigue.
- 500g lamb mince
- 2 tsp ground cumin
- 2 tsp ground coriander
- 2 cloves garlic chopped or crushed
- 1 tbsp chopped mint
- pinch of cinnamon
- salt and pepper to season
- 6 pitta bread (brown or white)
- Salad
- Preheat oven to 180 degrees or gas mark 4
- In a bowl, add the herbs, spices and garlic to the lamb mince and combine well.
- Split the meat mixture into 6 or 8 and shape into balls.
- Place onto a lightly greased baking tray and cook for 20 minutes in the oven until nicely browned.
- While the koftas are cooking, carefully cut open the top of the pitta bread and fill with salad.
- Take out of the oven and split the balls of meat in half. Add 2 – 3 pieces of kofta to each pitta. Add mayonnaise if required
- Enjoy.
