We love apples in this house. Our fruit bowl always has apples in plentiful supply and we all eat them either as a snack, pudding or cut up into wedges on the side with a sandwich. The lovely thing about apples is that they are so versatile. Apples are so easy to cook with and they make a great ingredient for puddings, cakes and even savoury dishes and I often use apples when I am cooking with the children. One of my favourite comfort foods is a lovely apple crumble with custard and my husband would say apple pie is his.
This year has been a particularly good year for apples and the good weather conditions during the summer has lead to a later and much more flavoursome crop. Over at Waitrose, there is a wealth of information about apples, including a guide to the different types of apple and some amazing recipes that look really scrumptious.
In celebration of the apple season, I decided to try the Ginger and Apple Pudding Recipe from Waitrose and I have to say that it is a really lovely pudding. The combination of the ginger and apple makes it a really rich and warming pudding and the addition of the apple rings gives the pudding a nice texture. Perfect on a cold day with a dollop of ice cream. The original recipe makes 6 small pudding, however I made one big one and then divided up.
Ingredients
150g butter, softened, plus extra for greasing
175g unrefined dark brown soft sugar
3 l eggs, beaten
150g self-raising flour
3 pieces (Chinese) Stem Ginger In Syrup
2 small Cox or Royal Gala apples
Method
Preheat oven to 180c and butter a large dish or pudding basin (if you are using a basin, line the base of the basin with a circle of parchment).
Combine the butter and 150g of the sugar until pale and fluffy. Gradually add the eggs and then the flour.
Strain the ginger and leave about 3 tablespoon of the syrup and finely chop.
Peel, core and dice one apple and add it into the mixture along with the ginger.
Cut the top and bottom off the remaining apple and cut into 6 horizontal slices. Sprinkle the remaining sugar onto a plate and dip the apple pieces in until they are covered. If you are using a basin, line the basin with the apple slices, before adding the mixture, if not, add the apple slices on to the top of your mixture.
Pour the mixture into your dish and level off and cover with foil. Bake in the oven for 30 – 35 minutes until the sponge is well risen or springy to touch.
Serve with ice cream or cream.
