An Easy Mother’s Day Cake

I love baking and making cakes and over the last few years, I have started to make my own birthday and celebration cakes rather than buy them ready made.  I am still a novice when it comes to icing and decorating, but one thing that I have learnt is that with a bit of icing and some imagination, the art of clever cake decoration isn’t as difficult as you would think.

The people at Coppenrath and Wiese set me a challenge to do exactly that, using one of their cakes and some icing and decorations to decorate it with, they asked me to create a cake for Mother’s Day.

Interestingly enough, I had never thought about buying a dessert style cake and decorating it myself before, but it is perfect for those times when you want something special with that hand made look but are short on time.

As always, I kept things very simple.  I used two chocolate fudge cakes which come with a generous amount of chocolate sauce on the top and I sandwiched them together using the sauce from the bottom one as a natural filling for the cake.  I then used the sauce from the top cake and smoothed it out gently with a knife, so that a thin layer coated the top and sides of the cake.

I like using chocolate finger biscuits to decorate the outside of cakes as I think it looks simple and effective and the children love it.  I cut the biscuits to size and then alternated between the white and milk chocolate ones as I stuck them around the edge of the cake.

I made a heart shape for the top using pink and purple smarties and then finished off by tying a bow around the cake.   I was quite pleased with the end result and it tasted delicious, if I was short on time again, I would definitely look at using a dessert style cake again.

    oh Nikki this is sooooo pretty and knowing the size of the cake I am surprised but also pleased to see how well it takes chocolate fingers (I have bought some to decorate mine too!!)
    i think any mum would be happy to have this on MOthers Day x x

    I think you’ve done an amazing job Nikki. I’ve always fancied doing a cake with chocolate fingers around the side, just looks so effective.
