Smoked Salmon and Cream Cheese Pasta

I love it when I throw random things together to make a meal and it works really well and this dish; Smoked Salmon and Cream Cheese Pasta is currently one of my favourite things to eat and the real joy is that it is so ridiculously simple to make and not hugely expensive on the ingredients front either.

Smoked Salmon and Cream Cheese Pasta

A quick and easy pasta dish combining cream cheese and smoked salmon with pasta.
Ingredients
  • 200g cream cheese
  • 1 teaspoon garlic puree or paste
  • 400g pasta
  • 100g smoked salmon (trimmings are fine to use) chopped
  • half a teaspoon of dried Dill
  • salt and pepper to season
Instructions
  1. Add some water to a pan and add a pinch of salt. Bring to the boil.
  2. Add your pasta and simmer gently.
  3. Using a heat proof bowl, add the cream cheese and garlic puree and pop the bowl on top of the pasta pan for a couple of minutes to warm the cheese until it is soft.
  4. Take the bowl off the heat and mix well. Season, add the dill and the smoked salmon. Mix again.
  5. Drain the pasta, saving a small amount of the water and add pasta and water to the cheese sauce, mix and enjoy.
