Flapjack Cups with Chocolate Recipe

August 3, 2020 in Cooking

It has been too long since I shared a recipe on here but I recently came up with a crazy idea to make flapjack cups.  We love flapjacks in this house and I usually make a flapjack traybake with white chocolate. I don’t know where the idea came from to make cups but it was a good one and we all agreed in this house that they are amazing.  I also shared a photo on Instagram and lots of people seemed to like the idea too, so I thought it was worth sharing over here too.

Serves: 12 flapjacks
Flapjack cups drizzled with milk and white chocolate
Ingredients
  • 100g butter
  • 100g brown sugar (you can use caster sugar)
  • 200g oats
  • 5-6 tablespoons Golden Syrup (more if you like it softer)
  • 50g milk chocolate
  • 50g white chocolate
Instructions
  1. Preheat the oven to 180c and grease a 12 hole deep cake tin
  2. If the butter is not room temperature, pop into a bowl and microwave to soften
  3. Mix sugar into the butter until combined
  4. Add in the oats and Golden Syrup and mix well. Add extra Golden Syrup if you like your flapjacks to be moist
  5. Divide the mixture into the cake tin and fill each hole to the top with mixture and press down firmly with the back of a spoon
  6. Bake in the oven for 10 – 15 minutes until the flapjacks are golden brown
  7. Melt two types of chocolate in two separate bowls over a pan of boiling water.
  8. While the flapjack cups are still warn, gently push an indent into the top of each cup.
  9. Remove from the cake tin and drizzle melted chocolate into the indent and then drizzle the second type of chocolate over the top
  10. Enjoy
